Cut medallions from a piece of backstrap about 1/2" thick. Silver skin removed. Pound with mallet to 1/4" thick, place a cube of sharp cheddar cheese, a slice of jalapeno pepper. Roll the backstrap around the cheese and pepper. Then wrap a strip of bacon around the roll. Close with a tooth pick. Marinade in Jack Daniels Marinade comes in a heavy zip lock type bag. (Can be purchased at any Super WalMart). Refrigerate for 3-4 hours remove and cook on a hot BBQ until the cheese starts to melt and the bacon is crisp. Serve with your favorite beverage.
Then start making more because everyone wants more.
Let's hear from everyone on their favorite recipe.

I'll have to try that.
I do something close to that.
Slice up the backstrap and hit it with a meat tenderizing hammer.
Slice up some yellow onion and bell pepper. Lay a thin piece of each on the slice of meat and roll it up. Then wrap it with a piece of bacon, run a toothpick through it an grill it.
You can also do this with the meat off the ham and shoulder. Just have to hit it a little more with the hammer!

Marinade in Jack Daniels Marinade
This is something I am definitely going to have to try.
This is what I use to marinate the deer meat in:
1. Tony Chachere's
2. Italian dressing
3. Worcestershire sauce
Then I take it and spread cream cheese on it and wrap it with bacon and stab it with a toothpick. I also stuff a jalapeno pepper in it too.
I can see one common ingredient though
BACON!
